Four dishes for your Kwanzaa feast

The African-centered celebration of Kwanzaa (Swahili for first fruits) takes place Dec. 26-Jan. 1. Family, community and culture are at the core of the holiday. Candles in a kinara are lit daily with each one symbolizing one of the seven principles: Umoja (Unity); Kujichagulia (Self-Determination); Ujima (Collective Work & Responsibility); Ujamaa (Cooperative Economics); Nia (Purpose); Kuumba (Creativity); and Imani (Faith). The celebration culminates in a Karamu or feast held on the 6th day where you’re likely to find a delicious array of beans, rice, stews, and sweet potato dishes.
